This is certainly a more traditional and authentic style. The second school adheres to the belief that a pre-cooked sauce is the better option. Pre-cooked sauce would be thicker thanks to the cooking process and the addition of spices, olive oil, garlic, onions and thickeners like tomato paste. Most large commercial pizza chains use cooked sauce.
